Great to meet you and welcome to the TianoCore project! Glad you hear you are interested! There are some existing tasks listed in the wiki for proposals. Another project which I haven't had a chance to add to the wiki yet is implementing a multi-threaded TCP/IP stack. There are been some work already done on this, that work is currently sitting here:

I believe Maciej ran into issues with reconciling this work with the current UEFI spec and UNDI driver requirements. Though there is definitely a lot of promise here. From what I remember it increased network performance from 100 Mb/s to 1000 Mb/s. Figuring out what work is required to make this production ready and get it merged into the mainline would be a great improvement.
